Mediterranean cooking in Downtown Santa Rosa

A chef shaped by movement.

Chef Ilyas Kara spent years cooking across cultures, ships and restaurant kitchens before opening Kalimera. The food carries those journeys quietly: Greek, Turkish and wider Mediterranean traditions, interpreted for the table in front of him.

The story

Eight years at sea. A lifetime around food.

Before Kalimera, Chef Ilyas spent eight years cooking aboard Celebrity Cruises. The work demanded consistency, speed and respect for guests from every part of the world.

Later, kitchens in Northern California gave him a different pace: closer to farms, wine country and the people returning to the same table week after week.

Kalimera brings those experiences together without turning them into a theme. It is a personal Mediterranean restaurant, built around food he knows well and hospitality he believes should feel natural.

The kitchen

The dish begins with balance.

Smoke and acidity. Warm bread and cool yogurt. Slow-cooked meat beside herbs, lemon and olive oil. Chef Ilyas builds dishes through contrast, not decoration.

The goal is simple: food that feels complete on the first bite and still invites the next one.

“The table should feel generous, but never heavy.”Chef Ilyas Kara
